In the past few decades, more and more people have begun to question the story behind their food. Conscious consumers now opt for organic food and support community farmers markets.  And yet, for the last 22 years, the tipped minimum wage for restaurant workers has remained stuck at $2.13/hour.

How did this happen, and what can we do about it?
